Every time I hear spaghetti carbonara, I think of my brother Will. I was at his apartment in NYC once and he offered to make me some. He explained that it contains eggs. I think I declined. He also showed me how to saute chicken with scallions and, back in Dumont, how to make chili.
He's my big brother, after all. He has taught me important lessons about life just by being himself. He doesn't preach, he just acts quietly and is quietly generous. I learned, for instance, that if you're lucky, people show up to keep you company when your heart gets broken. Will drove down to the shore to take me out for dinner. I was 25; he was 29. Without him saying so, I knew he cared. I like to call him a man of few words.
I think I eventually made spaghetti carbonara once, from a Giada cookbook I own. Or maybe I just considered it. But tonight I ordered it at the Italian restaurant in South Orange that we went to with our nice friends Fay and Howard. The main course serving looked moderate, but it was rich, I guess with the Parmigiano cheese and pancetta. Comforting and simple. Took the remainder home.
Somehow felt it was about time I stepped up to the plate and tasted a pro's version. Next step: Order in Italy one day!!! And, if Will ever offers again, take him up on it.
