Kale & Cauliflower Alfredo

Yesterday, I bought Vegetarian Times Magazine at Whole Foods. This evening, I made the pasta shown on the cover, with whole wheat linguine, a lot of kale, a cauliflower puree, grated lemon peel, nonfat Greek yogurt, freshly grated Parmesan, etc.
The 7 year old took a bite and swallowed it--which gave me hope--but then said she hated it. We made her a tuna sandwich on white and gave her a plate of sliced avocado with sprinkle of salt. H. ate the pasta with some trepidation. I liked it okay. I think I used too much kale, and didn't wilt it enough. But I felt good about getting a lot of greens. I hope to fight heart disease and cancer for H. and me--and to balance out my winter chocolate cravings, which are coming on fast and furious.
