The other women loved my tweaked version of Melissa Clark's Un-Pumpkin Pie, made with pureed, caramelized butternut squash. What's not to love? said Alma. The pie is not too sweet, and I used coconut sugar instead of brown sugar in the filling and skipped the brandy since I didn't have any. [Doubled up on good vanilla.]
It's a challenge to make the crust w almond and coconut flours instead of the usual white; the new version fell apart and I had to pat it in the pan. Yet it turns out to be more tantalizing--and every bit as buttery, thanks to the butter--as classic pie dough. And of course, almond meal flour and coconut flour are more sustaining than airy white all-purpose. More grounding.
Enjoyed talking to the other [all slender] women about making family meals and desserts without pasta, cheese, white flour and white sugar, and focusing on whole grains. Supped on tasty saag, sans paneer; a delicious spicy shrimp and rice dish in a paella pan; and a tahini cookie. Lots of ice water. Alma gave us party favors--packs of pressed dates for recipes. :)
A couple of people took pie wedges home, but there were two Sunday slices left for H. and me to have on the couch, just right on china plates w hand-whipped cream on top. [Butter and cream are compliant foods on Whole Life Challenge Kickstart level.]
