My Date with Bolognese Sauce

The 2008 book is on amazon for $11.98; at A.C. Moore store, $5.
Don't know if I'll do Bolognese Sauce again. I got home around 5ish and stood cooking for hours. Didn't serve it over rigatoni to Fig and friends until 7:40 P.M. And that was cutting corners--I was supposed to let it simmer, covered, on lowest flame for another 2.5 to 3 hours! [Since H. doesn't eat meat, he had something else, and was hungrier earlier, too.] But Bolognese Sauce with Pasta seemed like a nourishing, enticing meal for a rainy day. Turns out it's also a serious commitment, no quickie.

It tasted good but yeah, I should have let it simmer more. I left it on the stove the next few hours after we ate, so it should be even better tomorrow.

Also made sauteed spinach and a nice Caramelized Pear Compote [Bartlett slices browned in a cast-iron skillet with sugar, butter and cinnamon] to serve with little scoops of ice cream. Look at me, eating fruit. Yessir.

Both recipes are from the book pictured above, which has a $29.95 cover price but was for sale at A.C. Moore on Monday for $5. They have stacks of books there. I really do like this one. Lots of great recipes I want to try, including pie, biscotti and more. I hope the Mexican Hot Chocolate is in my future [tomorrow]. The photos are so inviting--always a VERY BIG reason to love a cookbook.

  3. Cooking--chopping, sauteing, simmering, stirring, peeling, browning, spicing, salting, boiling, serving, eating. And crying from the onion, but that's all part of the process.
