Healthy Peanut Butter Oatmeal Cookies

In the 198Os, at my first magazine job, at Woman's Day, one great perk was the "giveaway tables" in the halls, where departments would put things that were up for grabs, from cakes to wonderful picture frames made by the crafts dept. [and photographed for the magazine].

I got some of my first and still favorite cookbooks on those giveaway tables, and these cookies are tweaked from an applesauce cookie recipe in one of those treasures--The Low Blood Sugar Cookbook, copyright 1986 by Patricia and Edward Krimmel.

But now I made them better with a nice scoop of natural peanut butter from the Orleans Whole Food Store on Cape Cod. And I made them vegan for Figgy by using egg replacer powder instead of 1 egg and vegetable shortening and a little coconut oil instead of a stick of butter.

To sweeten them: Applesauce, frozen apple juice concentrate [defrosted] and 2 T pure maple syrup.

Yum.

I've been wanting to make these for days but waited until I finished a deadline. I made the batter and had the cookies in the oven within 25 minutes.

They are a little rubbery, because they don't have that granular sugar most cookies do. But that's okay! If anyone wants the recipe, I can post it.

  1. The Woman's Day giveaway tables! The BEST! to be able to get pretty products and home decor items was so exciting for a young woman starting out.

    1. Yes I loved the castaways there--a cross stitched checkered tablecloth that was discarded mid/cross-stitch and that H. used in his Brooklyn apt; color-stamped curtains; a crocheted rug in the shape of a house; decorated photo frames etc Such riches!
