Vegan Cookies to Love

No-bake cookies to make in a jiffy in a food processor [mine is small]. Go to Minimalist Baker and search 3-ingredient cookies. All you need is oats, PB and Medjool dates. This recipe is a keeper. The optional dark chocolate dunk requires a few additional ingredients. I doubled the cookie recipe and for the dunk, melted a 3-ounce 85 percent dark Theo Chocolate bar and stirred in 2 teaspoons pure maple syrup, a pinch of salt and 1 tablespoon melted coconut oil. This made enough to coat about 2/3 of the double batch. Vegan Figgy loved these! So did Dan, but not finicky Punch, who preferred Saltines w raspberry jam and a glass of cold milk at bedtime. Xo
